Exploration, synthesis and studies of gel forming simple sugar-chalcone derivatives

Abstract

Simple sugar chalcone derivatives have been obtained by the aldol condensation of various β-C-glycosidic ketones with aromatic aldehydes under the basic condition. Aglycon dimer chalcone, an unexpected cleavage product of sugar chalcone, was obtained under the same condition as a by-product. The Zn-mediated reduction of sugar-chalcone resulted in the formation of the corresponding reduced product. The products were characterized using NMR (1H, 13C), mass spectroscopy and elemental analysis. Few of the sugar-chalcone derivatives exhibited the gelation property, and their morphology was studied using FESEM and HRTEM.
